BEEF
 
Topside
Also known as Silverside and Top round,Topside is a lean cut of beef best suited for stewing and roasting.
Rolled Sirloin
Tender, juicy and full of flavour, Rolled Sirloin is an ideal roasting joint.
Rib
Rib is one of the best roasting joints and is available on or off the bone
Fillet Steak
Taken from the tenderloin, Fillet is the premium cut of beef steak.
Sirloin Steak Sirloin is a close second to the fillet, offering a tender steak.
Rump Steak
Also known as round steak, slightly less tender than the premium steak cuts, but full of flavour nonetheless.

As the name suggests collar bacon is taken from the pigs back, near the head.
 Green Gammon Joint
The deliciously classic gammon cut originates from the hind leg. Green, aka fresh or unsmoked gammon refers to a product which has been cured using salt or brine but not smoked. 
Smoked Gammon Joint
As before this cut comes from the hind leg but is smoked to give a subtle yet earthy flavour to the gammon.
Green Middle Bacon
 Middle bacon comes from the side of the animal and as before, is described as green due to the lack of smoking in its preparation.
Smoked Middle Bacon
Middle bacon comes from the side of the animal, but this bacon has been lightly smoked to give it the well known earthy flavour.
Streaky Bacon
Streaky or side bacon comes from the pork belly giving it delicious layers of fat running alongside the succulent meat.
Back Bacon
Back bacon comes from the loin region on the back of the animal, it is a very lean meaty cut. 
Hogs Pudding
Hogs pudding is a type of large sausage common to devon and cornwall with a higher percentage of offal compared to the conventional sausage.
Black Pudding

The half leg of lamb refers to the top 'meatier' section of the leg and is best cooking in a similar fashion to the whole leg
